Beet hummus pasta

After I made my beet hummus, I decided to make some very simple pasta with it for my dinner. Any hummus can be used in a multitude of ways, such as hummus toast, as a dip, replace mayo with it, or add it in a salad. But today we are taking the pasta route. All you need is the pasta, hummus and whatever else you which to add to the pasta dish.

Ingredients:
16 oz of bowtie pasta
1 onion
8 oz of mushrooms
Salt to taste
1/2 tsp of black pepper
1 cup of beet hummus
1 tbsp of thyme
2 tsp of cumin powder
1/2 tsp of chili powder
3 green onions
4-5 cloves of garlic

Start by boiling the water for the pasta. In a large pot, pour in a big amount of water and 2 tablespoons of salt ( I am using sea salt), and let it come to a boil. When the water starts boiling, add in the pasta and cook it al dente by following the directions on its box. Mine took about ten minutes. When the pasta is ready, strain it; do not rinse it. But remember to reserve a cup of the pasta water.

In the meantime, get the other ingredients ready. Wipe the mushrooms clean with a damp paper towel. And then slice the mushrooms. Slice the onion as well; I sliced mine in julienne. In a large pot, heat up some oil; I am using coconut oil. Cook the onions on a low flame turning them every two minutes for about ten minutes, that way they will start to slightly caramelize, but not all the way. After that, add in the sliced mushrooms, and let them cook down; about 3 minutes. Once the mushrooms as cooked down, add in the spices (salt, minced garlic, black pepper, chili powder, and thyme) and let them cook for between 30 seconds and one minute to give them a chance to wake up.

Continue by adding the beet hummus and the reserved one cup of pasta water. Once the beet hummus has been diluted well in the pot, add in the cooked pasta, and mix it in the sauce well. Once the pasta has been mixed up well in the sauce, cover the pot and let it cook for about 2-3 minutes. After that, turn off the heat, add in the sliced green onions and mix them in.

Serve warm.
