I usually don’t care for salads, but this one is very satisfying. I love lettuce, I love blue cheese, bacon. The toasted pecans in the salad is a nice touch. I had this salad alone for dinner and was completely full. And it’s pretty easy to make.

Ingredients:
1 head of iceberg lettuce
cherry tomatoes
4 oz of blue cheese
1 cup of yogurt
1 cup of mayonnaise
3/4 cup of buttermilk
1 tbsp of mustard
3-4 cloves of garlic
1 tsp of salt
1 tsp of sugar
1 tsp of black pepper
1 tsp of chili powder
1/2 cup of pecans
4 bacon slices

OK, first thing that needs to be taken care of is to freeze the blue cheese. When the cheese is frozen, it will be easier to grate. By having smaller chunks of cheese in the dressing, it will amplify the blue cheese flavor. Leave the cheese in the freezer for about one hour.
Toast the pecans. They can be toasted inn the oven, but today I choose to toast them in a pan since it’s just a small amount. On low heat, warm up the pan. Once it’s hot, add the pecans and move them around every 30 seconds until they are done toasting. Keep an eye on them because they can burn easily.
The next step is to cook the bacon. Put the bacon is a hot pan on medium heat, no need to add oil, it will give off it’s own. Fry the bacon for two minutes on the first side and one minute on the other side. Set it aside to cool completely.
Let’s get on to the dressing. It is pretty straightforward. It’s all about mixing. Mix the yogurt, mayo, mustard, crushed garlic, the spices and the buttermilk. Mix them well with a spatula or whisk. After that start grating the blue cheese. Once it is done, mix it in the yogurt mixture. Take the cooled bacon slices and chop them to bits.
All that is left to do is to assemble the salad. After a thorough rinse and take out the two outer leaves, cut the iceberg lettuce in half, and cut the half in half again to give a quarter. Plate the quarter wedge surrounded by some tomatoes. Spoon some of the dressing on top of the lettuce. Sprinkle some bacon bits and toasted pecans on top, and your salad is ready to devour.
