Pork burger (Haitian spices)

This burger is the first burger I learned to make. My mother was the one who taught me how to make it. I’ve been making it since 2004, and to this day it’s still my favorite burger recipe. If you are familiar with our choice of spices in Haiti, you’ll love it. Or if you love burgers, in general, you’ll love it too.

Manje ya gou, li fout gou!!!

Ingredients:
1 head of Garlic
1/3 cup of Parsley
1/4 cup of bell pepper
1/4 cup of Thyme
2 springs of scallions
4 lbs of pork ground meat
2 eggs
sea salt to taste

This first thing to do is to make the spice sauce (epis). In Haiti, we make “epis” every time we have to season something. The idea is to use fresh spices, and mash them in a pilon/motar or use a blender. It’s pretty easy to make. Simply add all of the spices to a blender. And this time, instead of using lime or sour orange for our liquid component, we will be using eggs for that. Please don’t use anything else. Blend until smooth.

Pour the spice sauce into the meat, and use your hands or a spoon to mix thoroughly. When done, form the patties in the size and shape you desire. make a dent on top of each patty, so they won’t puff up while cooking. You can grill or fry them. I grilled mine. If you are using pork like me, cook them at least four minutes on each side. Let them rest at least 10 minutes before cutting into one so the juices don’t run out of the patty.

You can make burger sandwich with the patties. Or you can have vegetables with them on the side for dinner.
