Coconut patties (coconut burgers) (vegan)

For a meatless week, try making this savory burger. If you are worried about your protein intake, the mushrooms in the recipe fill that role. Use spices of your choice, but I decided to use Mexican inspired spices.

One bite from this patty will make you coco-NUTS!!!

Ingredients:
half an onion
8 oz of mushrooms (of your choice)
1 tbsp of salt
1/2 tsp of black pepper
1 head of garlic
1 large potato
1/2 a belle pepper
the zest and juice of 1 lime
1 tsp of cumin powder
4 cups of coconut flakes
1 jalapeños
1/2 cup of cilantro
3 green onions
about 1 cup of breadcrumbs

Let’s get started!!!

Boil the potato. In a pot add some salt and the peeled potato. Boil it until it’s cooked. When getting the coconut flakes, make sure that they are not sweet coconut flakes. Sweet coconut flakes would be horrible in this recipe. The flakes are long strands; so put them in a food processor or blender to make cut them into smaller bits. Set them aside.

Once the potato is cooked, put all the spices in a blender or food processor and blend them until they all come together. After that, mix the coconut flakes with the spices. Add the breadcrumbs half a cup at a time and test to see if a formed patty can hold its shape.

After that form the mixture into patties. I got 10 patties out of my batch. Fry the patties for two minutes on each side. You can also bake them if you want to avoid the oil. But I think that they taste better fried.

Make a sandwich using my burger buns (if you wish). I used vegan mayo mixed with sriracha and spread it on the bread, lettuce, tomato, bell pepper and jalapenos on top of my patty. It was an absolutely divine sandwich.
