When I was making this smoothie, I thought that the sunshine name would be perfect because it is so bright and refreshing. A quick search showed that many great minds think alike. And having a list of ingredients as name is less exciting. Papaya smoothie will always have a special place in my heart, but this sunshine smoothie is a very second close one.
This smoothie will have you running on sunshine!
Ingredients:
3 cups of plant-based milk
2 carrots
3 mangoes
2 oranges
I later added 1 tsp of turmeric to half of the batch. I recommend you try it as well.
Let’s get started!!!
After properly washing the ingredients, specially the carrots, they need to be frozen. Grate the carrots, peel and dice the oranges and mangoes. Lay them on a baking sheet so that they can freeze in a single layer; that way, you can portion out the quantity you want to blend, instead of blending this whole batch at once. This batch gave me a lot, A LOT. But it’s what I wanted.
After the fruits are frozen, about two hours, pour the plant-based milk (I am using almond milk) to a blender, the frozen fruits (and some turmeric if you want to try that) and blend until smooth.
Serve cold
