With these pancakes you’ll have a sweet and filling breakfast; or dinner, if you’re one of those people (me) who eat pancakes for dinner, SOMETIMES! Don’t judge!!
I’d like to APPLE-ogize for how much you will love this recipe!!
Ingredients:
1 cup of flour
1 apple
1 tsp of baking soda
1 cup of apple cider
1/3 cup of maple syrup
4 tbsp of coconut oil
2 tbsp of sugar
2 tsp of cinnamon
1/2 tsp of nutmeg
1 tbsp of vanilla extract
2 tbsp of raisins
1 pinch of salt
Let’s get started!!
First thing is to make the sauteed apple sauce. But while making it let the raisins soak in the apple cider; that way they’ll become softer and also absorb a little bit of the apple cider flavor.
Since the apple peel will be used, make sure that the apples bought are organic. Give it a good wash and dice the apple into bite size pieces after taking out its core. In a pan on medium heat, pour in two tablespoons of coconut oil, add the apples, one teaspoon of cinnamon, a quarter teaspoon of freshly grated nutmeg and let them cook for about six minutes, turning the apples every two minutes. After that, pour in the maple syrup and let it coat the apples on the heat for about one minute, then turn off the flame.
For the pancakes, mix all the dry ingredients together (flour, sugar, pinch of salt, baking soda, cinnamon, freshly grated nutmeg). After that pour in the wet ingredients (coconut oil, apple cider, vanilla extract). Make sure that all the raisins are in the batter. Mix them well together until all the flour is incorporated.
On low heat, warm up a non-stick pan (or pour some coconut oil if your pan is not non-stick). Scoop in the pancake batter and let the batter cook for two minutes on the first side; flip it and let it cook for one minute on the next side.
Serve warm.
