Bean sauces are a staple in Haitian cuisine. They are cooked at least thrice a week. And my favorite one is black bean sauce. They usually are paired with white rice or cornmeal. But personally, I love black bean sauce enough to just drink it by itself.

Ingredients:
3 cups of dried black beans
4 cloves of garlic
1 stalk of celery
1 green onion
1 tbsp of sea salt
a few cloves
about 7-8 cups of water

The steps in the recipe itself are pretty simple. It’s just that making the bean sauce can take a while.

Give the beans a thorough rinse. In a big pot, on high heat, add all of the ingredients (the water, the beans, the garlic, the celery, the green onion, the cloves, and the sea salt). Traditionally, sea salt is used in Haitian cuisine, but you can use a different kind of salt if you don’t have it.

Cover the pot, and let the beans cook. It took me about one hour for my beans to cook. Once they become soft enough, fish out the celery, green onion, garlic cloves, about one cup of beans and about 3 cups of the liquid and blend until it becomes a smooth mixture. Pour it back in the pot, lower the flame to medium heat, and let the sauce thicken up a bit.

Serve warm.
