I say it’s one of best the meatballs you’ll ever eat. Yes, it’s that good. I used to eat it pretty often as a kid. My family usually pairs it with black bean sauce and white rice. Eat it with whichever kind of Haitian rice or cornmeal you want, but you can always try it with the aforementioned way.

Ingredients:
2 lbs of ground beef
1/4 of a bell pepper
3 green onions
3 habanero peppers
sea salt to taste
1/4 cup of fresh thyme
1/3 cup of fresh parsley
1 stalk of celery
1 tomato
1 medium onion
1 medium potato
1 head of garlic
1 egg
about 2-3 tbsp of flour
12 oz of tomato sauce
oil for frying

Boil the potato with some salt. In the meantime, peel your garlic. I remember everyone is always avoiding the job of peeling garlic; we love the taste, but we don’t want to do the work. Once the potato is cooked, start making the epis (blended spices).

Making the epis is pretty straightforward. Simply add all of the spices (garlic, green onions, bell pepper, celery, thyme, parsley, habanero pepper), and the egg, cooked potato and sea salt (to taste) in a blender and blend until smooth. When it’s done, pour it in the meat, leaving about 1/3 cup of the epis behind. Mix the epis with the meat to season it.

Pour some oil for frying in a pan, and put it on high heat. Put the flour in a cup. Take a portion of the meat, roll it into a ball. Put it in the cup with the flour and roll it in there so the surface of the meatball can be covered with flour. Once the oil is hot, put the meatballs in there to fry. Don’t overcrowd the pan so the temperature won’t drop. The meatballs have to be fried in hot heat so they won’t disintegrate. Fry them on each side for three minutes.

After that, make a sauce to go with the meatballs. Dice the onion and tomato in small pieces. In pan on medium heat, warm up some oil. Add the diced onions and let them cook for two minutes. Add the diced the tomato and let them cook for two minutes. Pour in the rest of the epis that was set aside, and let it cook for three minutes, with the pan covered. After that, pour in the tomato sauce and the same amount of water and let cook for about two to three minutes and then turn off the flames.
