Watermelon popsicle

Make a nice summery and refreshing treat that you and your family can enjoy. It’s healthy (vegan), and oh so easy to do. The hardest part is for you to wait and let it set in the fridge.

Be careful! Popsicles are known to have a stick up their butt!

Ingredients:
watermelon
1 cup of sugar
1 cup of water
1 tbsp of vanilla extract

Let’s get started!!

First make the simple syrup. To make a simple syrup, you need equal parts sugar and water. Pour them in a pot, place the pot on high heat and let it come to a boil without stirring it. When it starts to boil, set it aside to let it cool down completely.

Once the simple syrup has cooled down, start on the watermelon. Dice the watermelon. Put the diced fruit in a blender with the vanilla extract and the simple syrup (all of it) and blend until smooth.

If you have a popsicle mold, pour the juice in the mold. Or pour the juice in a bowl and later you can use an ice cream scoop to serve as a sorbet. Let it set in the fridge for at least four hours. I let mine in the fridge overnight.
