Broccoli patties

Very filling and tasty patties. These patties can fulfill your burger cravings while staying super healthy. It’s a very tricky way to include more vegetables and nutrients for picky eaters. In this process you can choose to make it fully vegan or not.

Brocc’ on!!!

Ingredients:
2 bouquets of broccoli
parsley
jalapeños
avocado
thyme
potato
Italian seasoning
salt
pepper
egg
breadcrumbs

Let’s get started!!!

Start by boiling a medium size potato and add 2-3 garlic cloves with the potato (optional). Next, cut the broccoli florets. Although I didn’t do it, but if you did not want to waste the broccoli stalks, you can cut them small and boil them until tender. Blanch the broccoli florets by putting them in boiling water for about three minutes, take them out and rinse them under cold water to stop the cooking process.

Once both the potato (and garlic) and the broccoli are done cooking, put them in a food processor along with the parsley, thyme, salt and pepper, jalapeños, Italian seasoning, egg (leave it out if you want a vegan patty) and blend. Once everything is blended, taste for salt and add breadcrumbs until the mixture can hold its shape.

Form your patties. They can be cooked in many differents manner. They can be grilled on a grilling pan, they can be baked and they can be fried. I tried all three ways and preferred the fried ones.

You can eat your broccoli patties for dinner with a side of salad, or as a sandwich. I made sandwiches with mine. And added only green ingredients to my sandwich. A mashed avocado instead of mayo, jalapeños, watercress (I prefer them over lettuce). Go ahead a make yourself a green goddess sandwich!
