While making this soup, you might think to yourself that those simple ingredients could not possibly make an awesomely flavored soup, but they do. I’ve learned that the dishes with the simplest ingredients make flavors that are very enjoyable. And this soup is one example. It’s cheap to make; you probably already have most of the ingredients on hands. If not, even buying all the ingredients, it’s still cheap for the amount of food compare to if you were to buy food all week.
I soup-pose we should get on with the recipe
Ingredients:
3 lbs of beef (with bone in)
2 tbsp of salt ( I am using sea salt)
1 tsp of black pepper
1 onion
2 tomatoes
12 cups of water
4-5 garlic cloves
1 tsp of Italian herbs
3 stalks of celery
2 carrots
4 bay leaves
5-6 cloves
1 tsp of chili powder
short pasta ( I am using cavatelli)
Let’s get started!
First thing to do is to prepare all the ingredients. Dice all the produce ingredients; the celery, carrots, onion, tomatoes and garlic. Once they are all ready, you can start with the cooking part.
In a big pot of water, on medium heat, add the meat in and cover it so it can start to boil. When the water starts boiling, you will see scum floating on the surface of the water. Scoop them out. Take your time to scoop them all out. It took me a while. When you think you’re done, stir the water around and more will come up. It’s important to scoop them out of the pot because they are disgusting and no one wants to consume those.
When all the scums are out, add salt and pepper and let it come to a boil. After that, add the carrots and celery to the water and let them cook for about 2 minutes. And then, add all the other spices (chili powder, cloves, Italian seasoning, bay leaves), and let’s give them one minute so their flavors can start marrying into the broth. After that, add the diced onion, tomatoes and garlic to the broth, and let the water come to a boil.
As the water is boiling, add the pasta, and salt if more is needed, and let it cook for about 7-8 minutes, covered. When the time has passed, check the taste of the broth, add whatever spices you think is missing. Lower the flame to a low setting and let it cook for 30 minutes, covered.
After the 30 minutes has passed, check the meat. It should be ready by then. Turn off the flames and serve yourself a big bowl.
