Butter (vegan)

I wanted to have a vegan cheesy pasta dish with vegan sausage on the side. And butter was needed for all of that. I made many different recipes for that meal, vegan sausage, vegan cheese sauce, vegan butter and the pasta itself. They were all great. Check them out.

You might be surprised at how easy this butter recipe is. You probably already have most of the ingredients on hands. If you don’t have the nutritional yeast, you can keep it out, but keep in mind that will cut on the taste.

Ingredients needed:
2 cups coconut oil
1 cup plant-based milk (I’m using cashew milk)
1 tbsp of olive oil
2 tsp of vinegar
1 tsp of salt (I am using sea salt)
2 tsp of nutritional yeast

Let’s butter up!

If your coconut oil was in solid form, coconut butter, you have to melt it for this process. But when you melt it, it will become hot and that’s not good for this recipe. The coconut oil has to be room temperature or cool to the touch. So after melting, you have to let it cool down, while making sure it doesn’t go back to its solid form.

salt doesn’t melt in oil, so add the salt to the milk and dissolve it in the milk. I am using sea salt and cashew milk. Add the vinegar to the milk and let it sit for 5-10 minutes. The milk will start to curdle.

Mix the olive oil into the coconut oil.

After that, all you have to do is to add everything to a blender (milk mixture, oils, nutritional yeast) and blend on high speed for 2-3 minutes. It is very important to blend that long because the blender will help the milk and the oils emulsify for a quick moment.

When you are done blending, pour the mixture in a mold of your choice. I bought the butter mold that I am using in the video on Amazon. If you are using a silicone mold, have a tray under the mold for easy moving.

Now, the reason I insisted on the coconut oil not being hot, is when you pour the mixture in your mold and put it in the fridge, it needs to solidify as quick as possible, and doesn’t have time to separate. And if the oil is hot, it will take too long to cool down before solidifying. It happened to me when I first tried making it.
