Shrimp fried cauliflower rice

I love shrimp fried rice very much. I usually buy it at the Chinese take-out, but it can get really greasy, and high in starch. As a Haitian, I really don’t have a problem with starch (rice), but I wanted to try something else with this dish. I thought of quinoa, but I settled for

Cheesy pasta (vegan)

I have been building up to this pasta dish with my 3 previous recipes (Cajun sausage, cheese sauce, butter), and it’s all vegan. I could have simply cook the pasta and dunk the cheese sauce in there, but I’ve never been into simple recipes like that. So I went on to add pumpkin and mushrooms.
