Corn fritters

I recently found out about this little ball of tastiness. So I immediately wanted to try them and they did not disappoint. I love corn very much so I decided to use fresh corn right off the cob instead of using the can ones. And I believe it’s the best way to do it. Some people say it’s best to eat them with maple syrup, others say with powdered sugar. Although I tried the maple syrup one, and it’s still good, I prefer to eat them bare.

My puns are usually corny, but not this corn recipe!

Ingredients:
2-3 corns on the cob
2 cups of flour
2 eggs
1 1/2 cup of milk
4 tbsp of butter
1 tbsp of thyme
1 tsp of baking soda
1 tsp of chili powder
1 tbsp of salt
1 tsp of black pepper
oil to fry

Let’s get started!!

Mix all the spices (salt (I am using sea salt), black pepper, chili powder, thyme) and baking soda into the flour (I am using whole wheat). After that, melt two tablespoons of butter and mix it with the milk and eggs. Set them aside. Cut the corns off the cob. In a large skillet, melt two tablespoons of butter, add the corn and let them cook for about 3-4 minutes. In the meantime, mix the wet ingredients with the dry ingredients. Once the corns are done cooking, add them to the batter and mix them in.

In a pan or pot, have about three cups of oil on medium heat warming up. Once the oil is hot enough scoop in, using two spoons, the batter in the hot oil. Don’t overcrowd the pan or the oil temperature will drop, and the fritters will end up absorbing too much oil. Cook the fritters for two minutes of the first side, and one minute on the next.

Serve warm.
