Grape chia jam

Grape jam/jelly is my favorite. I just love it too much; specially in a peanut butter and jelly sandwich. I’ve only had one small problem with it: it’s too sweet. As a kid, of course that wasn’t an issue. But as a grown up who reduces sugar in everything that I eat, the regular jelly bought at the store is too sweet to my palate. So, I tried this homemade version. Same grape jelly taste, except it’s less sugar.

I think this recipe is pretty GRAPE!!!

Ingredients:
1 lbs of red seedless grapes
a pinch of salt
1 cup of sugar
1 tbsp of vanilla extract
2/3 of chia seeds

In a pot on high/medium heat, add in the grapes, salt and sugar. After a few minutes on the heat, the grapes will start releasing their juices. You can use a potato masher to crush the grapes. After all the grapes have been crushed, pour them in a blender, with the juices, add in the vanilla extract and blend until it’s all liquefied. Strain the grape juice to take out the skins that did not get blended well.

Pour the grape juice back in the pot on high heat and let it boil for about ten minutes. When it’s done, pour it in a heat safe container and add in the chia seeds. Let it cool down in the fridge. It will thicken up quite a bit and form the jam part. After that you can use it whichever way you usually use grape jelly. That week, I ate mine with some cassava bread and peanut butter.
