Homemade, grilled and vegetarian. Keep the cheese off if you want a vegan option. This incredibly tasty pizza was really hard for me to stop eating. Every now and then I miss it and want to do it again. The sauce, my love for kalamata olives, the grilled pepper; every topping there was finger licking good.
IN PIZZA WE CRUST!
Ingredients:
For the dough:
3 cups of flour
1 1/2 cups of water
1 tbsp of yeast
2 tbsp of oil
1 tbsp of salt
1 tbsp of sugar
For the pizza sauce:
14 oz of tomato sauce
3 tbsp of oil 1 tbsp of sugar
3 garlic cloves
1/2 tbsp of baking soda
1 tsp of salt
1 tsp of chili powder
1 tsp of dried basil
1 tsp of dried oregano
For the toppings: Use whatever toppings you want, but I am using
Bell pepper
Kalamata olives
Green onions
Mozzarella cheese
Let’s get started!!!
The first thing to do is to make the dough. Activate the yeast. Warm up the water between 105-110 degrees F (about 1-1:30 seconds in the microwave). Add one tablespoon of sugar and the dry yeast to the warm water; and mix them in. Let the yeast mixture sit for about five to ten minutes. It will foam up and have a strong yeast smell. If it doesn’t do those two things, then the yeast did not activate.
Once the yeast has foamed up add salt and oil to the flour. Mix the yeast mixture into the flour. It will start forming into a dough. Knead it well for about 8-10 minutes. Cover the surface of the dough with oil, place it in a bowl, and cover it and let it rise in a warm place for about one hour (it will double in size).
In the meantime, have the pizza sauce ready. On low flame, in a pan with olive oil, cook the crushed garlic for about 30 seconds. Add the tomato sauce, the sugar and spices and mix them well. Let it simmer until it has thicken.
Whichever toppings you choose, get them ready. If you are using the same as me, simply follow the directions. Slice the scallions finely. Grate the cheese. Mozzarella cheese can be a pain to grate; you can also just slice it if you wish. Keep the cheese off if you want a vegan pizza.
Make a garlic oil by crushing four cloves of garlic into three tablespoons of oil. Roast the pepper directly over the stove fire; it is faster that way. Turn it every two minutes. Let it cool a bit before handling it. Scrap the burnt part of the pepper with your fingers. Use some water to keep your fingers clean while doing this. Don’t be tempted to put to pepper in the water, that would wash off all of the flavor on it. Slice the pepper, and use a paper towel to dry out any excess liquid in any topping. Chop the pitted olives.
After the dough has risen, knead it some more for about one to two minutes. Take the portion of the dough you desire to make the pizza; I was able to make 3 pies out of this dough. Roll it out in the shape that you want (most likely a circle, right??). Brush the grill and each side of the dough with the garlic oil. Grill the side you want as the top first for about two to three minutes. Flip it, and add the pizza sauce, and toppings Put the cheese last. And cover the pizza while it’s on the grill for about five minutes.
Do all of this on low heat
After that your pie should be ready.
You can also make this pizza in a large pan if you don’t have a normal grill, or a stove top grill like mine.
