It’s a pretty easy and quick recipe to make. It is extremely great with pasta. But I also had some of mine with a toast and caramelized onions. Both ways were heavenly. Is pesto a spread for bread and pizza, or is it a spread for pasta??

It’s PESTO both world

Ingredients:
1 bunch of basil (about 4 oz)
1/3 cup of pine nuts
2 cups of parmesan cheese
1/2 cup of olive oil
3 cloves of garlic
1 lemon

1 tsp of salt. It is optional. I didn’t put in mine because the salt in the cheese was enough for me

Let’s get started!!

Toast the pine nuts. You can leave them as is and completely skip this step. But I think that the toasted nuts add an additional flavor profile to the pesto. In a pan, on low heat, put the nuts in and shake them every now and then to make sure they are moving around and not just burning. Keep doing it until the nuts starting browning, and then you can turn off the heat.

Finely grate the cheese. Wash the basil. Cut off the stems. When you are done with both the basil and the pine nuts, put them in a food processor with the garlic and grind them to a coarse paste. Pour in the olive oil and squeeze the lemon juice in there and continue with pulsing them into the basil mixture, while making sure the mixture stays coarse.

Take the basil mixture out of the food processor, and mix in the parmesan cheese. And then your pesto will be ready.
