This burger is probably one of my favorite things that I ever made. I cannot even describe to you how much I love it, so I’ll tell you a story. I had left 3 patties for my boyfriend and his mother to taste, along with my burger and black sesame buns. It was my day off, so I went straight to sleep while he went to work. When I woke up, I was hungry and wanted some of my burgers. When I went to the fridge to make a sandwich, there was no burgers. I called my boyfriend to find out if he took some, he said no. HHMMM. Ok. So, I finally decided to ask the mother, and she told me after tasted the first patty she couldn’t stop herself and ate the whole thing. I was happy that someone loved my food that much; but I was also not happy because I wanted some of that good stuff as well.

Ingredients:
500g of salmon
1 medium onion
1/2 tbsp of salt
1/3 cup of fresh parsley
2 tbsp of fresh thyme
1 cup of breadcrumbs
4-5 cloves of garlic
1 egg white
1/2 tsp of black pepper
1/2 tsp of paprika
1 tsp of chili powder, optional
Watercress or arugula to put in a sandwich or have as a side
Some bell pepper slices for a sandwich, optional.
Let’s get started!!
First if your salmon has a skin on it, slice it off. You could also ask your fisherman to slice it off for you, it’s easier that way. I don’t know why I didn’t do that. It was a pain for me to take it off because my knife was giving me some trouble. After that, chop the salmon finely. You can do this process using a knife or a food processor.
In a large bowl, add your spices and aromas to your fish. Dice the onion finely, mince the garlic. Chop the fresh thyme; I simply take the leaves off the stem, it’s my preference but chopping it is faster. Chop the parsley as fine as you can get it. Sprinkle in the chili powder, paprika, black pepper and salt ( I am using sea salt). After that mix all those spices into the salmon.
Separate the egg, and add in the egg white. If you add in the egg yolk, it will affect the color of the patties and they won’t stay pink salmon; but by all means, add the yolk if you wish. Add the breadcrumbs and mix them into the salmon mixture. Try to form a patty in your hand. If it holds its shape, then it’s ready; if not add more breadcrumbs a quarter cup at a time.
Form the patties into the size that you want. I was able to make 9 patties out of my batch. You can fry, grill or bake your patties; I grilled mine. If you are frying or grilling, let them cook for 2-3 minutes of each side. If you are baking them, bake them in a preheated oven at 400 degrees F for 15 minutes.
Form some nice burger with them or just eat them with a side of salad. They are fabulous.
