Sos mori is a very loved recipe of mine. I love to eat it for breakfast, lunch and dinner. It is that good. I love the saltiness of the fish, the mild texture of the vegetables and I love to pair it with the sweetness of yellow plantain.
This dish is soFISHticated enough for all three meals of the day!! 😀
Ingredients:
1 package of saltfish
4 medium carrots
2 medium onions
juice of 1 lime
1 teaspoon chili powder
5-6 springs of thyme
1 bell pepper
3-4 tablespoon of oil
3-4 cloves of garlic
Do NOT add any salt to this dish
Tomatoes are a great addition to this recipe, but I just didn’t want them this time.

Salted cod fish, or saltfish, like the name suggest is immensely salty. So to take some of the sodium away, it needs to be soak in water for at least one hour. Change the water every 15 minutes. While the fish is soaking, get the other ingredients ready. Chop the fresh produce. Once the saltfish is done soaking, cut it in small pieces.
In a large pan, add the oil and let it warm up. Once the oil is hot enough add the carrots. They need to go in first since they need the most time to cook fully. Let them cook for 2 minutes, while mixing them every minute; and then add the diced bell pepper. Let the bell pepper cook for two minutes. After that add the diced onions, and let them cook for two more minutes. Add the garlic and let it cook for one minute. You can chop the garlic, crush it in a garlic presser or a pilon. And then, squeeze in the juice of a lime and add the bundle of thyme, let them cook for one minute. And lastly, add the saltfish, and the chili powder. Let the fish cook in the pan for about three minutes, mixing it every minute.
After this process your saltfish will be ready. I ate mine with some sweet plantain. Green plantain, sweet potatoes or yam, or any root vegetable are excellent with this dish. Cornmeal is a nice idea as well. Or even bread.
