I love shrimp fried rice very much. I usually buy it at the Chinese take-out, but it can get really greasy, and high in starch. As a Haitian, I really don’t have a problem with starch (rice), but I wanted to try something else with this dish.
I thought of quinoa, but I settled for cauliflower rice. I haven’t tried it yet, and I was curious. It looks grainy like rice, but healthier. And I’m not the biggest fan of quinoa. So, that was a fast and easy decision for me.
Ingredients needed:
1 cauliflower
1 lbs of medium shrimps
1 cup of green peas
1 cup of diced carrots
Sesame oil
3-4 tbsp of soy sauce
2 eggs
2 scallions
1 medium onion
3-4 garlic cloves
Salt to taste
Black pepper to taste
Let’s get started!
If you are not using frozen shrimps, but fresh shrimps like I am, they need to be cleaned. Take off the shells and take off the veins and rinse them. I am using mediums sized shrimps, so I cut them in half. If you are using small sized shrimps, no need to do that.
Get the spices ready. Dice the onion small. Peel and crush the garlic cloves. Slice the green onions. Chop the fresh thyme; I usually take the leaves off the stem instead; it’s my preferred method. And beat the eggs.
Clean the cauliflower. Lightly rinse and pat it dry. Shave off any discolored parts if they bother you. Cut off the stems, and keep the florets. Put the florets in a food processor and finely chop them for about 5 seconds. Don’t let the food processor go for too long. It will turn into a grainy mixture.
Let’s start with the cooking part. First, scramble the eggs. Add 1-2 tbsp of sesame oil on high heat. Add the beaten eggs, a pinch of salt, and whisk the spoon around until they are done. Take the eggs out of the pan and set them aside.
Add some more sesame oil; about 3 tbsp worth. Add the shrimps and a pinch of salt and black pepper. Let them cook until they turn pink, about 3-4 minutes. Add the carrots, peas, onion, garlic, thyme and a pinch of salt, and let the cook for 2-3 minutes.
Add the cauliflower rice and mix it in well. Let it cook for 3-4 minutes. Add the soy sauce and eggs to the rice and mix them in well. Add the green onions and turn off the flame.
