A fresh pie for this summer heat. You’ll enjoy it very much. Just make sure to get sweet strawberries, because their flavors is the focus of this pie.

Ingredients:
Filling:
1 cup of sugar
1 lemon
2 pints of strawberries
1/4 cup of cornstarch
1/2 tsp of extract
2 tbsp of jam
pinch of salt
Pie dough:
1 cup flour
Pinch of salt
1/2 cup of cold butter
1/3 cup of powdered sugar
Let’s get started!!!
Preheat the oven at 425 degrees F.
Like most pie, start by making the pie dough. Whisk the dry ingredients for the pie dough together. Next, dice the cold butter and crumble it into the flour mixture. Knead it until it forms a dough; then press the dough into the greased pie pan. Freeze the pie dough for about twenty minutes. When the time has passed, blind bake the pie shell for 10-15 minutes.
While the pie shell is cooling make the filling. Dice one pint of strawberries into a pot. Add in the cornstarch, lemon juice, sugar and a pinch of salt. Put it on low flame and let it thicken up. Once it’s very thick, set aside to cool down. After it has cooled down, about ten minutes, spread the filling in the pie shell.
For the decorated top, dice, into quarters, another pint of strawberries. Warm up two tablespoons of jam and one tablespoon of water and mix them together. Pour the jam mixture over the strawberries. Then arrange the sliced strawberries on top of the pie. Keep in mind that you could also just do whip cream for the decorated top.
